Made a turkey dinner recently and one of the hockey pucks of roux that I’ve had in the fridge for a few months came in handy when it was time to make the gravy. Nobody wants to spend hours cooking roux low and slow the day of a big meal.
A great way to repurpose cooked poultry is to make tetrazzini - pasta with mushrooms, Parmesan cheese and the bird of your choice. Cook onions, add mushrooms and combine with spaghetti, cheese and spices. A can of condensed mushroom soup could be good too. Serve with lemon wedges and hot sauce.

Cook equal parts flour and butter on low heat for two hours, stirring frequently. Remember that it’s gonna keep cooking once you take it off the heat.
