A Rusty Wok Never Sleeps
Time for Nirvana Wok to get back to wok cooking! As luck would have it, I found a really nice, perfectly seasoned wok on the way to work last week. It has a larger sweet spot than my old wok, which has been hanging outside for months. It’s a one piece unit with a short handle, oven mitt required.
Speaking of open flames - I’m giving up using my first generation Ooni pizza oven for pizza. It’s just too tricky to use, even for a veteran of four pizza places like me. Hard to get the crusts fully cooked without burning the toppings. The newer Ooni ovens have more uniform heat and solve that problem.
From now on I’ll be saving the Ooni oven for broiling fish and kabobs. My most recent batch of pizza was made in the convection section of our new induction oven and it turned out great.
I figure it’s also time to upgrade Nirvana Wok’s outdoor gas burner! The one I have now is a little sketchy and it’s hard to regulate the gas. Luckily my new wok works great on our new induction oven! Thank you to my 97 year old great Aunt who recently passed away and (indirectly) gifted us this incredibly expensive appliance. Will be reviewing it in a future post but for now let’s just say that I can boil water in under two minutes, and our gas range — impossible to clean and a source of indoor air pollutants — is long gone.
