Cajun Spiced Potato Chips
Made some potato chips. Sliced potatoes, soaked them in ice water, dried on paper towels, fried at 300 degrees for a few minutes, sprinkled with spice. I used Walker & Sons Slap Ya Mama Cajun Seasoning. Despite hints of domestic violence in the ill-conceived brand name, Slap Ya Mama contains only salt, pepper, red pepper and granulated garlic. Been a big fan of granulated garlic lately - it’s not like nauseating, cloying garlic powder. It’s more like pleasant, earthy garlic sand.

One could, theoretically, use Zatarain’s Creole Seasoning instead of Slap Ya Mama, but then you would be adding disodium inosinate and guanylate (MSG-like chemicals) and sugar, plus dextrose (which is basically sugar) to your otherwise pristine potato chips.
Not pristine, though, really. I fried these chips in canola oil which is just bad all around. Post about the evils of seed oils (canola, soy, corn, cottonseed etc.) coming soon.
Hell - I just wanted to use up my remaining supply of canola oil before not buying it ever again.
