It’s really hard to ruin a lobster roll, which traditionally is just lobster and butter on a toasted roll. If you are in a restaurant that is a legacy place but has declined, and has absentee owners and a crew of hung over teenagers (every seasonal beach town has places like this), a lobster roll is a good bet.
