Prepared a Moussaka and left it in the refrigerator for 12 hours to let the goodness incorporate. Baked it at 350 in a covered casserole pan until I saw the béchamel sauce sizzling, about 15 minutes.
Cooked eggplant (with Persian spice rub this time just for kicks), potato, zucchini, onion and ground pork.
I have a half pound of ground lamb in the freezer but I’m saving that for a future Bolognese sauce.
Assembled in pan and poured sauce on top.
Don’t forget to add some nutmeg and Parmesan to your béchamel!
Feels Good to Shop Smart
Our latest trip to DK Market in Renton was a triumph. For under a hundred dollars we got a bunch of essentials (yogurt, veggies, pasta, olive oil, tahini) and some treats (chocolate, chicharrones, sour cherries, halva).
You can’t look at that photo of all those goodies without remembering how many people in this country are going hungry. People in other parts of the world have it far worse.

Over at my day job at the soup kitchen food donations have been drying up over the past few months. My polite way of telling people this is that it’s “because of our current political climate.”
Tax cuts for billionaires … war and starvation for the rest of us.

After five years of not accepting donations, Nirvana WOK is now accepting donations. This newsletter only has 50 subscribers so I’ll be looking for other ways to get the word out.
