My mom’s recipe for Chinese Chicken was chicken dipped in bread crumbs and fried in an iron pan with soy sauce added after, and it was delicious. I’ve updated the recipe here for people who don’t want to make a mess on the stovetop.
Slice chicken breast to your liking and “velvet” it in a bit of baking soda, soy sauce, corn starch and olive oil. Blanch some Chinese broccoli. Add to pan along with your favorite sauces and spices and broil. Serve with sticky rice and sliced green onions.
