Rosalyn Carter's Strawberry Cake

First Lady Rosalyn Carter (R.I.P.) had great cake recipes. Anything with heavy cream and strawberry jello in it is all right by me! Typical Southern cooking - if a recipe doesn’t have bacon or lard it has butter and heavy cream!

One of our long time volunteers cooked this and brought some in for meal service.

And just a disclaimer here - I am not speaking for the organization I work for or authorized to do so when I blog here, which is why I like to keep things somewhat anonymous when I post about us. Rest assured that it’s a good group. The volunteer who brought the cake in has been donating her time to the organization for over 30 years.
