Fried Calamari with pasta and sautéed bell peppers the other night (at my day/night job - not affiliated with Nirvana WOK). The squid came pre-cleaned but it was pretty labor intensive and messy to cook. Luckily, I had time to prep them during the day. Tossed them in some spicy flour and deep fried. Then before meal service we baked them. Worked well - they retained their crispiness.
A great bunch of new volunteers were trained and they did an incredible job.
