Turn Easter into a Day of Feasting
Celebrate the start of Spring with a strata made out of fresh spinach, bacon, scallions, multiple cheeses and some cream. Serve with fresh fruit.
For lunch have corned beef and cabbage. (Not shown: a rich broth, mustard, etc.)
For dinner: take-away from that new neighborhood Mexican place, El Rinconsito.

So Meaty dont ya think. First the Bacon, then the Beef then the offal. I looked up Rinconsito and that means Little corner or something like that. The only truly vegetarian thing on the menu was a side of avocado. For heavens sake! At least I won't have to go there. But let me tell you no matter how hard Seattle tries we are so far from the source we might be living in Iceland and craving Mexican food. As I remember, the best Mexican food was what my Grandma made in San Antonio Texas. But I was a child eating whatever was placed in front of me.Bon Pacques!
