Onion Ring Tragedy and Fried Onion Triumph
Purchased some Alexia brand onion rings from our local PCC store - a supermarket chain that engages in “local, sustainable, organic, etc.) virtue-signaling marketing. Turns out Alexia is owned by international food conglomerate Lamb Weston.
“At Alexia, we think sustaining the Earth is non-negotiable.” Their packaging brags about “sustainable soil management practices such as crop rotation and cover cropping” as if that hasn’t been done for thousands of years.
The Alexia onion rings turned out hard as rocks. They should be called onion-flavored bread rings.
These sad Alexia onion rings inspired me to cook fried onions.
Sliced a white onion paper thin on a mandoline, tossed in rice flour and fried. Got the recipe from Marination, where I used to work as a prep cook.
