Why do you drain the fat?

30lb. of 70/30 ground beef produces alot of fat plus i use alot of olive oil - i actually ladled the fat out but not all of it because, as the culinary program at the art institute of seattle* would tell you: "fat is flavor"

*Now out of business, all student loans for the nationwide chain of schools forgiven

Of course! I cook one pound at a time, and I do not drain the pain because "fat is flavor," and, also, I do my best not to throw away food.
