The quiche recipe from the original Moosewood Cookbook has been my standby for decades, although I usually end up using store-bought crust.
Fun fact: Nirvana Wok world headquarters used to be based in Ithaca, New York and I dined at Moosewood several times back then. There were a bunch of inexpensive and fabulous vegeterian-leaning restaurants in Ithaca back in the 80s. I also liked the Greek pizza places with the spinach and feta pies and Greek salads.
Moosewood still exists but as you can imagine it has gone upscale.

Quiche! I only use store-bought crusts. This is why pies get made. Quiche was a dinner staple when kids lived with us. Deli ham, cheese and a green item: salmon and potatoes or salmon and corn. My recipe comes from The New Basics Cookbook, which Judith Daley presented to me on the occasion of my marriage. I like quiche.
